Claire and Martin Murray, the founders of the award winning Dunnet Bay Distillery in Caithness, have created a series of seasonal gins, each one a reflection of the changing seasons in the picturesque village of Dunnet situated by the coast in the northern Scottish Highlands. Here we look at the latest seasonal release, the Rock Rose Summer Edition Gin.
Spurred on by the extraordinary success of Rock Rose Gin, which was met with widespread acclaim upon its launch in August 2014, Martin and Claire began to experiment with different botanicals and in May 2016 distilled their first seasonal gin, the Rock Rose Spring Edition Gin. As well as more traditional gin botanicals, they used a selection of herbs, flowers and spices foraged from the fields and cliffs surrounding the distillery and grown in their own garden including sycamore sap, dandelion and coltsfoot.
Their second seasonal gin, the Rock Rose Summer Edition Gin has been released this month and we’re delighted to have it available for purchase here on Craft Gins.
Not content to rest on their laurels, Martin, Claire and their distillery gardener Hanna challenged themselves to make a citrus style gin without using any citrus fruit peels! Hanna has cultivated a selection of unusual botanicals for this gin in the distillery’s gardens and rockery including lemon balm, clover, lemon thyme, pineapple sage, meadowsweet and elderflower. Martin has distilled these in their copper pot still, Elizabeth, to create a deliciously refreshing gin, redolent with the flavours and fragrances of the Caithness summer.
